Chickpea Veggie Burger

I shredded the onion, garlic, carrot and broccoli.

I fried it in the pan with a tablespoon of virgin olive oil. Set aside.

I cut the cilantro and parsley leaves very small and put them together with the chickpeas (drained), egg, bread crumbs, vegetable mixture and spices (cumin, white pepper and salt) and crushed them.

When I saw that it was a manageable dough I started to make small balls (I made 4 but I think that if I make them thinner I can get more).

After making the balls, I flattened them and started to make the shape. I put them on a plate and left them in the fridge for a while (this is not strictly necessary but I feel they handle better).

In a frying pan with a drizzle of olive oil, turn and turn until golden brown and ready.

You can eat them alone or in a hamburger. I put cucumber, tomato, arugula and feta cheese on mine and then I baked some sweet potatoes in the oven and that's it.

PS: they can be made vegan by using the water from the chickpeas or by making a mixture with water and chickpea flour.
