Eggplant and minced meat cannelloni 😋

Clean the eggplant and cut into thin slices lengthwise.

Put them in a bowl with water and salt and leave them for a while.

Peel the onion and garlic very finely.

Pour a little olive oil in a frying pan or griddle and cook the eggplant slices (just enough to give them color and flexibility) and set aside.

In the same pan add a pinch of oil and heat it, when it is hot add the garlic and then the onion and add a pinch of salt.

Wash about 5 ripe tomatoes and crush them (you can use the purchased and you save this step I did not have and I did it this way).

When the onion is poached, add the crushed tomato and let it cook, stirring often so that it does not stick.

In another frying pan, cook the minced meat, previously seasoned with salt and pepper to taste.

When the tomato is fried add oregano and the minced meat, the cheese (I usually add the cheese I have in the fridge and we like, I grate it and add it) and give it a couple of turns.
