Orange salmon with couscous

Put in a frying pan a dash of oil and when it gets hot put the garlic peeled and cut in thin slices, as soon as it browns a little add the dates without the seeds and chopped, and the juice without seeds of the 3 oranges. Let it boil for 5 minutes and add the tomato, vinegar and soy sauce. Let it boil for another 2 minutes and then transfer it to a glass to blend it well. When everything is well ground, we put it back to the fire. Add the spoonful of cornstarch in a little water of the time, mix well and then put it in the pan with the mixture and stir until it thickens.

While we do this we can boil water for the couscous and in another pan we can also cook the salmon with a little oil, salt and pepper. When the water boils, remove from the heat, add the couscous and leave it for about 10 minutes, then add a little butter and mix it with a fork. You can add some pistachios to decorate the salmon with the sauce.
