Soak the 5 dates in warm water for 10 minutes while grating the carrot and crushing the walnuts.

Drain the dates well and grind them together with 70 ml of oatmeal, 3/4 of very ripe banana, a teaspoon of vanilla essence and half a tablespoon of EVOO until a fairly liquid homogeneous mixture is obtained.

Add the liquid mixture together with the carrot and the crushed walnuts and mix well.

Combine the dry ingredients (flour, cinnamon and baking powder) and mix well. It does not remain a liquid dough. Pour it into a mold (mine is 12 cm) previously greased or covered with parchment paper and bake at 180° for about 25'.

✔️La texture is moist so the toothpick trick can be confusing, when you see it toasted enough take it out and let it cool before unmolding. ✔️El banana gives it a lot of flavor and sweetness, you can adjust the dates if you prefer it less sweet. ✔️Cada oven is a world of its own
