Clean the artichokes, removing the toughest leaves, cut off the tips and empty the inside with a small spoon.

Let them soak in the water with lemon while we prepare the picada.

To do this, chop the garlic, mint and parsley and season with salt and pepper.

Drain the artichokes, fill them with the minced meat and place them in a pot (not too big, they have to be together and compressed) with the cut side down.

Pour in the EVOO and cover almost completely with water.

Cover and cook over medium heat for 30 to 40 minutes (they should be very tender).
