First of all (and most tedious) is to peel the cooked prawns (if you already buy them clean, you can save money). Peel them and place them in a large bowl, where we will put all the ingredients.

Chop the red onion into VERY fine julienne strips, to make it softer with the lime juice. Cut also the avocado, tomato and cilantro, and add everything to the previous bowl.

Once we have all the ingredients cut, we add the broth, the juice of the 4 lemons, a dash of EVOO and salt to taste. Let it rest in the refrigerator for a while (the longer it sits, the softer the onion and the tastier everything will be).

In this case I accompany it with a rice base (optional). If so, we prepare it with time to let it cool before mixing it with the other ingredients.
