For the falafel: Chop 1 and a half onions, 3 cloves of garlic, 400gr of chickpeas, a handful of parsley and coriander, 6 tablespoons of flour and add a teaspoon of lemon juice, baking soda, cumin, and salt, and half a teaspoon of black pepper. Beat everything in a food processor and let it rest in the refrigerator for 1 hour. Once the time has passed, make balls with the dough. Put oil in a frying pan and make the falafel by flattening it a little. When they are golden brown, remove from the heat and set aside. For the yogurt sauce: 2 yogurts, 1 chopped garlic clove, 1/2 teaspoon of black pepper, 1 teaspoon of lemon juice, 1/2 teaspoon of salt and 1 handful of coriander. Mix everything together and store in the refrigerator. Finely chop lettuce, grate a carrot and chop a red onion, assemble the fajitas with the falafel, yogurt sauce and the above ingredients.
