Salmon with sweet potato, bimis and yogurt dressing

Preheat the oven to 200g. Cut the sweet potato in half, add oil, salt and cinnamon and put it in the oven.

After 50 minutes, remove from the oven. We remove the skin and crushed with a fork. We put it in the dish

Meanwhile we heat two frying pans, one without oil for the salmon and the other with a splash of oil for the bimi.

When it is hot, add the bimi and cover with a lid. Stir to cook on all sides.

Serve. Add the yogurt dressing on top (it's in my profile) this time I added more mustard and cinnamon, it's the perfect dressing for the bimi and sweet potato!
