We put the soybeans to hydrate in water for about 15-20 minutes with sweet paprika, to enhance its flavor. I recommend that the water is hot, as it accelerates the process.

When the soy is almost ready, put a teaspoon of EVOO in the pan and when it is hot, add the chopped onion.

When the onion is transparent, add the well-drained soybeans and let it cook for about 5 minutes.

Meanwhile, we chop the tomato and crush half or an avocado (depending on the size). Add the sweet corn to the pan and spice, in my case with garlic powder, Provencal herbs and a little salt to taste.

Now add the crushed tomato and stir everything well. While it is cooking, heat the tortillas on the griddle.

We fill the tortillas: first the avocado and tomato and then the soy scrambled eggs. Finally, we can pour a splash of lime juice, which gives a very fresh touch 馃構馃い.
