Peel the shrimp and reserve the bodies (in my case rice shrimp). cook the shrimp heads and the monkfish head with 500ml of water, cook it until it tastes good.

Peel the carrots, leek and garlic, chopping them all together very small.

In another saucepan, sauté the vegetables with oil until poached, add white wine and let it reduce.

Add the tomato and rice and cook for 10-15 minutes.
