Spinach and baked sweet potato scramble

Peel the sweet potato and cut into thin slices.

Preheat the oven at 180ºC for 5 min. Mix the sweet potato, EVOO, basil and dehydrated garlic in a bowl.

Place greaseproof paper in a baking pan and spread the sweet potato mixture on top. Bake in the oven for 15 minutes.

Place oil in a frying pan and add the onion and bell pepper.

Add the spinach to the sauce (amount to personal taste, keep in mind that it is greatly reduced).

Remove the sweet potatoes and serve with the scrambled eggs.
