In a bowl mix the egg yolks, cheese and black pepper. If it is too thick, add a little of the pasta broth.

Cut the bacon/bacon/ bacon/guancialle and put it in a frying pan until it is done.

Add the pasta to the pan and mix well. Add the previous mixture and if necessary add broth until the desired texture is achieved.

Serve and add a little more pepper and Parmesan cheese for garnish.
