Take a bunch of carrots and separate the leaves from the root. Reserve the carrots for another preparation. Separate the stem from the leaf.

Once we have all the carrot leaves we are going to wash them well! It is important to do this step conscientiously as they are leaves that usually have a lot of soil. Let them drain.

In a pot put water to heat and when it starts to boil add the carrot leaves approx. 5-10 minutes.

Meanwhile, chop the garlic and onion and sauté them in a pan with a little EVOO.

Once the carrot leaves are ready, add them to the frying pan and sauté, salt.

Prepare the eggs for the omelet and add the vegetables from the pan, make the omelet and enjoy!
