Red lentil dhal with white rice

On one side, cook rice to taste with garlic and bay leaf. Set aside.

On the other hand, chop the garlic, the onion, the carrot (which could be grated) and the zucchini. Sauté the vegetables, adding a little oil and salt.

Add the red lentils and sauté a little together. Meanwhile, grate a ripe tomato.

Add the tomato with a little more oil and salt and sauté until cooked.

Add the spices (quantity to taste), stir and add the broth.

When it comes to a boil, lower the heat, cover and cook for 10-12 minutes or until the lentils are well cooked.

Add the coconut milk, mix and correct salt and curry if necessary. Cook uncovered over high heat for 5 more minutes.

Accompany the dhal with white rice (or whatever you prefer).
