- Add 3 handfuls or 3 small cups of rice. -Drain with cold water or cold tap water. - Stir the strainer energetically while the water drops until all the starch is removed (the water underneath will be transparent and not white as at the beginning).

If you have time, let the rice stand for 10 minutes to increase its consistency.

- Add the rice to the pot - Add lemon peel, bay leaf, thyme, oil, salt and pepper. - add two small glasses of water for each one of rice

- Cover with a lid and cook for 15 minutes.

It is a good accompaniment, in my case with some of Dabiz Muñoz's marinated ribs, egg and cherry tomato.
