Cut the breast into cubes or bite-sized strips and mix with the oil, soy sauce and all the spices mentioned above.

Transfer the chicken to the pan with a little more oil if necessary, and over medium-high heat let it cook. Once browned, set aside.

Cut the avocado, red bell pepper, tomato and onion into cubes. Mix everything in a bowl with the lemon juice and set aside.

In another bowl mix the yogurt, the hot sauce (I use Sriracha) and the chipotle sauce. These sauces are free choice, they are the ones I like but the important thing in this step is to put one or two hot sauces of your taste. Add black pepper and Provencal herbs.

Spread the yogurt mixture on the tortilla, add a handful of lettuce, the chicken, the avocado mixture and the mozzarella cheese. We close the fajitas and we can put aluminum foil to keep them closed.
