Preheat oven to 180 °C. Heat up and down. Peel, wash and slice the potatoes. Peel and cut the onions into strips. Try to make the pieces of the same thickness.

On a baking tray place a baking paper (you can also put a silver paper underneath to avoid scrubbing so much). Put a drizzle of oil and spread it to coat the parchment paper.

Place the potatoes covering the parchment paper. Then place the onion strips on top. Add a little oil, salt and spices to taste (thyme and Provencal herbs).

Put it in the oven for about 30 minutes. At half the height of the oven. Until we see that the onion is well done (a little to the taste of each one). If we see that it burns a little can be put on a shelf of the oven below.

Remove the tray from the oven and add the meat on top of the potatoes and onion. Add salt and spices to taste.

Put the tray in the oven for about 15 minutes more. Do not leave it much longer because the meat may stop a little dry.
