We put the rice to cook.

Cut the carrot into small cubes and chop the onion. In a frying pan with a little EVOO, sauté the carrot and onion for about 7-8 minutes.

Add 1 glass of vegetable broth or water and the washed and drained beans. I do not add salt because the vegetable broth is already salted but when adding the broth or water correct the salt to taste.

Cook over medium heat and cover for 7-8 minutes.

Add the drained rice and stir until the ingredients are blended.

And that's it, plate it and it's ready.
