First, cut the onion and red bell pepper into strips. Pour them into a frying pan with a tablespoon of EVOO.

When the onion is well poached and the bell pepper is soft, add the mushrooms. Note: cover the pan so that the mushrooms are cooked with the same steam, so that they are not dry.

In another frying pan, put the chicken breast previously cut into cubes and let it brown well with a tablespoon of EVOO. Then, add the soy sauce and stir so that it integrates well with the chicken.

In the meantime, boil the noodles for 2' at the most. Note: Do not cook them longer, as they are very thin and can become compact like a ball.

Drain the noodles and pass them through the frying pan to brown and color them a little, along with the vegetables, mushrooms and chicken.

Remove from heat and ready to serve!
