Red rice with ratatouille and spiced Tofu

Cook the red rice in boiling water according to the supplier's instructions.

Meanwhile we fry the red and green bell pepper and the onion. I put it in a frying pan with a little bit of oil and it is done very fast.

When it is done, add the chopped tomato and let it simmer until the liquid reduces a little and add the basil leaf.

When the ratatouille is ready, I put it aside in a plate or Tupperware and grill the sliced Tofu.

The Tofu is enough to make it turn and turn for one minute (I add spices before). We put it together with the ratatouille.

Drain the rice and serve. Sometimes I mix it all together and sometimes I separate it as in the photo, it is a matter of taste.
