Start by cutting the pears, walnuts and cheese into very small pieces. Set aside Let's start with the béchamel sauce. Melt the butter over medium heat in a frying pan, then add the flour and mix well. If it is dry, add more butter. Add the milk, stirring constantly to dissolve the flour, until the béchamel sauce thickens. Season with salt and pepper and add nutmeg.

Once the dough is thick, add the pears, walnuts and cheese. Set aside to cool slightly in a bowl in the refrigerator. Take a little bit of dough and dip it in egg and breadcrumbs. I have decided to make them in the Air Fryer but you can bake them in the oven or fry them with a little EVOO. They're brutal....make enough dough because they will fly!!!!
