Peel and cut the potatoes. Put them in a microwave-safe container and add a tablespoon of oil. Cover with cling film (make small slits). Let them cook for about 9 minutes.

While the potatoes are cooking, chop the garlic, zucchini and bell pepper. Cook with a tablespoon of oil over medium heat.

In a bowl, beat the eggs and add the potatoes and vegetables.

Stir until all ingredients are well mixed. Add salt to taste

In a frying pan put a tablespoon of oil over medium-high heat. When the oil is very hot, pour the previous mixture. Then, lower the heat to the minimum and with the help of a spatula, spread the omelet homogeneously.

When the underside is golden brown, turn over with a plate and cook the other side for 2-3 minutes.
