Cut the vegetables in julienne strips and grill them with a dash of EVOO.

To make the poached egg I use a small glass and cling film, pour a little EVOO on the film to make it easier to remove and not stick. And I use the following little trick:

We put water to boil and when it boils we introduce the egg for about 4/5 minutes.
