1. Cut the eggplants lengthwise. Bake the eggplant in the oven for about 10 minutes at 200 degrees.

In the meantime, we prepare the tomato sauce. Mix two finely chopped garlic with a little paprika, oregano and pepper.

Place the tomato sauce on a baking dish.

Stuff the eggplant with cheese. Place the eggplant and add cheese to taste at one end. Roll it up and place it upside down in the container.

Repeat the operation until the eggplant is completely filled.

Cover the eggplant with some of the tomato sauce and add some breadcrumbs.

Bake for about 20 minutes at 180 degrees. We can also add some chopped parsley and not vegan parmesan cheese powder from @saludviva_superalimentos (it is NOT ultra-processed, it only contains real ingredients)
