Cut the zucchini in half (lengthwise) and put them on a plate. We make some cuts on the surface and cover with cling film to put it in the microwave at maximum power for 5 min.

Once the microwave is finished, remove the dish taking care not to burn ourselves. Remove the film, drain the water and wait a little while for it to cool. In the meantime, cut the bell pepper and carrot into pieces. Once the zucchini is cooled, with the help of a spoon, empty the zucchini leaving only the peel.

In a frying pan put a little EVOO and when it is hot add the zucchini pulp and the chopped green bell pepper and carrot. Let it cook and add a little soy sauce (in my case gluten free). Finally add the sofrito and let it simmer for about 2-3 minutes. After this time, add the soybeans directly from the package (with the sauce of the sofrito the soybeans soften and swell so be careful with the amount). Meanwhile, we put the zucchini again with film in the microwave for another 3 minutes (already empty) to finish cooking.

Finally, once the microwave is finished, drain the water from the dish and fill the zucchini with the mixture from the pan. Once stuffed, I added a little mozzarella and oregano on top.
