Put the cod (previously frozen) in the refrigerator approximately 6-7 hours before cooking. If it is still frozen when we take it out, cover it with hot water so that it finishes defrosting.

Chop the onion and put it over low heat with a little oil.

While it is cooking, cut the potato into very thin strips, and crumble the cod crumbs a little to make them smaller.

When the onion is almost ready, add the crumbs and the eggs to the pan. Stir continuously to give it the form of scrambled eggs.

While it finishes cooking, we put the potatoes in the microwave for 4-5 minutes (we put them on a plate with another one on top covering them).

Remove the scrambled eggs from the pan and place the potatoes over high heat to finish cooking.

When they are ready, put the scrambled eggs back in the pan in case they have cooled down. Mix everything together and serve.
