Soak the chickpeas for at least 12 hours.

Blend all the ingredients in a food processor until a homogeneous paste is obtained.

Let stand 1h in the refrigerator before making the balls and flatten them, giving them the thickness you want.

In a frying pan put a little olive oil and fry the falafel. You can also bake them in the oven for 200⁰- 15 minutes, or fry them in plenty of EVOO.

Mix the yogurt, salt, garlic, pepper, pepper, parsley and lemon juice to make the yogurt sauce. Serve and ready 😉
