LAMB: - Preheat the oven to 200° with heat up and down. - Place the lamb shoulder in a baking dish and brush with EVOO. Sprinkle with a pinch of pepper, salt and fresh thyme. - Bake for 1 hour and a half. After half the time, turn it over to brown on both sides.

GUARNITION: - Wash the potatoes, leave the skin on (it is golden and delicious). - Peel two garlic and the shallots. - Place everything in a baking dish and mix with 2 tablespoons of EVOO, thyme and salt. - Bake for 50 minutes. Bake with the lamb when it has 50 minutes left in the oven.
