Millefeuille of eggplant, tomato and cheeses

Cut the eggplant, tomato and fresh mozzarella into thin slices. Remove the water from the mozzarella previously with a napkin.

Cook the eggplant slices in a sauté pan with a little EVOO, salt and pepper.

Preheat the oven to 210°. Next, we assemble the millefeuille in an ovenproof dish. The millefeuille has a layer of eggplant, a layer of tomato, a layer of fresh mozzarella, a layer of eggplant, a layer of tomato and grated cheese and a slice of goat cheese. Add a pinch of salt and oregano to the first layer of tomato.

Bake in the oven until the cheese is browned at 180°.
