First, soak the cashews and dates for 3 to 4 hours to soften them. NOTE: Remove the pits from the dates before soaking.

Put all the above ingredients in a blender or mini-blender, together with the canned coconut milk. Blend until smooth.

Pour the mixture into small glasses and refrigerate for at least 2 to 3 hours to reach the right texture. Ready to enjoy!

NOTE: You can use any type of fruit according to your preference. If you do not like coconut milk, you can substitute it with 300 ml of another milk, but keep in mind that the final texture will vary.

OPTIONAL: Add a fruit coulis to make it even more appetizing. I have crushed some blueberries and then strained the sauce to remove the skins. On top, some grated lime notes to give it freshness. And enjoy!
