Hello 👩🍳 Today I want to share a simple meal that doesn't take long to prepare: PURÉ OF POTATOES AND QUINOA WITH VEGETABLES. They are two preparations, but that can be made at the same time and in total of little more than half an hour. For the mashed potatoes: 🥔600 gr potatoes peeled and cut into chunks. 🥛300 ml milk 🥄1 tablespoon salt, pinch of nutmeg and black pepper. 🧈25 gr butter or extra virgin olive oil And a touch of paprika to serve I prepared it with the Thermomix: 1️⃣ Put the butterfly, add the potatoes, milk, salt, pepper and nutmeg, program 25 minutes/90C/speed. 1 2️⃣ Add the oil or butter (about 25gr) and program 20sec/vel. 3 3️⃣ Remove the butterfly and grind for a few seconds on speed 5-7-9. For the quinoa with vegetables: ½ onion 🧅 2 garlic 🧄 1 carrot 🥕 ½ red bell pepper 🫑 salt, ground cumin, turmeric and ground black pepper. 1 small jar of quinoa (it comes already cooked, a step we save ourselves, the other option is to cook the dried quinoa). 1️⃣ Cut the vegetables and sauté.
