Potato and sweet potato omelet

Roast or cook the sweet potato and then cut into squares. Set aside.

In a frying pan with extra virgin olive oil poach the onion (cut into small pieces) and add the thinly sliced potato. Add salt and cook until the potato is soft.

In a bowl, beat the eggs and add salt, the roasted sweet potato and the potato and onion, poached and drained from the oil in which they were cooked. Mix all the ingredients well.

Pour the mixture into a frying pan with very little oil and when the egg has set a little around the edges, turn it over with the help of a plate and cook for the necessary time on the other side, to taste.
