First we will make the sponge cake. Separate the 5 egg whites from the 5 egg yolks (we will only use 4 of the yolks). In a bowl, whip the egg whites until they are stiff, as shown in the photo.

Secondly, heat the 9 pitted dates in the microwave covered with water for about 2 minutes. Remove and blend the dates with the 4 egg yolks and a pinch of salt with a blender until a very homogeneous paste as shown in the photo.

IMPORTANT: It is a very large tiramisu, so if you are few, it is enough to make half the rate. I hope you enjoy it!

Next, mix the date paste and egg yolks with the egg whites, simply integrating them with the spatula using slow movements to prevent the egg whites from dropping.

The last step of the cake would be to add the flour mixed with 1 sachet of baking soda (I did not have royal baking powder, but if you have it, add half a sachet) with a whisk to the previous mixture. Grease a baking pan with butter and bake for about 20 minutes at 170°. I used a square mold of 22×22 cm.

Next, we put the coffee to brew in our Italian coffee maker. When it is done, we let it cool and in the meantime we make the cream.

The first step of the cream is to heat in the microwave with water the 17 dates (it was very sweet, so you can put less if you prefer). Next, add 50 gr of mascarpone, a splash of milk, a teaspoon of vanilla essence and the soaked dates (without the water!!) and blend as we did in the sponge cake until it is very homogeneous.

The next step is to add 450gr of mascarpone, about 150 ml of milk and the date mixture and beat with the whisk until it has a cream-like texture. As shown in the photo.

Once the cake has cooled, cut it in half.

And then in 6 equal parts (to be able to wet it better).

Dip each piece in coffee and press gently with your fingers to remove the excess. (A little cerdifooder trick for VERY special occasions: add a splash of cognac with a dessert spoon of panela, coffee alone is also very good). Once we have the first 6, we put the first layer of cream and repeat with the next layer in the same way. I leave here a photo of the cut 😍.
