Pizza with tofu base

Preheat the oven to 180ºC with heat up and down.

Drain the tofu and put it in a bowl. Crumble it with your hands and finish mashing it well with a fork.

Add a beaten egg and oregano to taste. Mix and integrate everything well with a fork.

Spread the mixture, giving it the shape of a pizza base, on a baking sheet with parchment paper and bake for about 15 minutes.

While the base is in the oven, wash the vegetables. Grate the carrot and slice the mushrooms. Sauté them in a pan with extra virgin olive oil over high heat for about 5 minutes. Add the spinach and sauté for a couple of minutes more.

When the base is done (a little browned), remove from the oven. Add the crushed tomato (you can use homemade or commercial tomato sauce) and the vegetables. Slice the fresh goat cheese, put it on a paper towel to remove some of the moisture and add it on top of the pizza.

Bake for about 5 more minutes so that the cheese melts a little.
