Rinse quinoa and boil according to package directions. Cool if desired.

Dice the tempeh (or seitan or tofu) and brown in a frying pan with a dash of oil, a dash of soy sauce and spices to taste.

Assemble the bowl: quinoa and spinach base, tempeh, diced tomato and cucumber (or other vegetables), some corn, olives and cheese.

Season with spices to taste and a drizzle of extra virgin olive oil.
