Bring water to a boil and, when it comes to a boil, add the previously washed quinoa. Cook for about 15 minutes, drain and rinse with cold water to cool it.

Meanwhile, in a frying pan with a little extra virgin olive oil, sauté first the bell pepper, onion and carrot, all cut small and after about 5 minutes add the tofu, previously drained and diced. After a couple of minutes add the broccoli cut into small florets. Add salt and pepper and spice to taste and let everything is to the desired point.
