Hydrate the textured peas in hot water for 10 minutes (or 20 minutes in cold water). Peel and dice the pumpkin.

Cook the pumpkin as preferred: oven at 200ºC for about 30 minutes, microwave or airfryer at 200ºC for 18 minutes. Season with cumin, salt and pepper.

Once the peas are hydrated, sauté them in a frying pan with a little extra virgin olive oil and the spices of your choice, season with salt and pepper and when they are a little browned add the crushed tomato. Cook for about 5 minutes more.

Assemble the bowl with the pumpkin, the pea with tomato and some fresh spinach seasoned to taste.
