Cold leek, apple and curry soup

Chop half an onion, a small or half a large leek, a small piece of ginger and sauté it all in a little EVOO. Season with salt and pepper.

Meanwhile, peel and chop the carrots and chop a large apple or two small ones. When the onion and leek are set, add the apple and carrot and curry to taste. I really like it and threw in a good amount 😋.

Stir and cook for a few more minutes and then add the juice of half an orange and enough water to cover the ingredients. Bring to a boil and simmer for 20-30 minutes or until the carrots are soft.

Blend the soup until smooth. To make it creamier, you can add some healthy dairy products such as evaporated milk, milk or yogurt. I added a splash of milk. Let it cool (although hot is also delicious 🤭).

As toppings I added crumbled fresh goat cheese and seed mix. Enjoy!
