Let's start by cutting the pumpkin (half or whole) into cubes

heat a large pot with the pumpkin cubes, garlic, oil and salt; cover with water and leave it over high heat.

now we are cutting the rest of the vegetables and we are putting them at the rate that we cut them (I start with the carrot and onion), we are stirring them.

and when they are all covered with water or vegetable broth, stir (especially when there is little broth left) and let it evaporate almost completely over high/very high heat.

once it is almost evaporated, the vegetables are very tender and juicy in appearance

add curry to taste (enough); a little sweet paprika, pepper and salt; a small glass of cow's milk/coconut milk; and 2-3 tablespoons of honey.

now it is a matter of stirring very well and adding milk/honey to taste until you get the consistency and flavor you like.

look at the units of vegetables, not the grams!!! and if you want to add or remove any vegetables, do not be afraid to do so. pd: I don't like half of the vegetables here and they are delicious like this, the bell pepper is not even noticeable :p
