Peel the cucumber, cut it in half and peel it with a spoon. Cut the rest of the vegetables into julienne strips. The lettuce leaves may have to be cut in half to fit in the roll.

Sauté the shiitake in a skillet over high heat, then add the grated garlic, salt, pepper, sugar, sesame oil and soy sauce.

To assemble the rolls, soak each paper in water (in a bowl) for a few seconds until pliable. Place them on a board and fill them first with a lettuce leaf placed horizontally in the center and top with the vegetables and shiitake. Fold the bottom of the rice paper up to cover the filling, then fold in the sides and roll up like a burrito. The lettuce and rice paper should be wrapped around the filling.
