If the squid is frozen, we thaw it, wash it and remove the feather. If the squid is fresh, we wash it, clean it and cut it into rings.

Cut a large piece of onion into small pieces and brown it in a frying pan with a little oil and salt over low heat.

When the onion is golden brown, add the squid and sauté everything.

Once everything is sautéed, add the red wine until it is half covered and let it cook (if you have an express pot, all the better).

Once the squid is soft (about 10 minutes in the pressure cooker and if not by eye as in my case) add the fried tomato and let it cook.

If we have ink this is the moment to add it since it is toxic and it must boil with the food for at least 10-15 min. If we do not have ink, nothing happens because when adding the fried tomato, the sauce will darken.

Taste and adjust salt if necessary.

And ready to enjoy! You can accompany it with whatever you like (in my profile I uploaded a post asking what to accompany it with and some of the ideas were top notch).
