First we will cook the potato and cauliflower in boiling water for a few minutes until it is sufficiently cooked. If they are a little raw better, since in the oven they end up cooking. In addition, the less you cook the cauliflower, the less flavor it will have.

In a blender, beat the potato with the garlic and the nutritional yeast until creamy. You can add spoonfuls of water if not. If you want to skip this step, substitute with vegan or homemade philadephia cheese.

Then add the cauliflower and onion and mash. Just so I don't have to chop the onion by hand.

Finally, transfer the ingredients from the blender to a bowl. Add the breadcrumbs, salt, pepper and rosemary and stir with a spoon. Check that the texture is good. If not, add 50 grams of oat flakes.

Make the croquettes. The dough will be quite sticky, so you will have no problem to coat in breadcrumbs. It sticks perfectly to the dough.
