First let's make the pesto. I usually make PISTACHO PESTO. We take and put in a blender the peeled pistachios, the basil, a pinch of salt, a pinch of pepper, the oil, a spoonful of parmesan cheese, and a garlic. The garlic must be tiny, otherwise it will have too much garlic flavor. We beat all this, if we see that it is very sticky we add a little more oil. And reserve in a bowl, once reserved and add 2 tablespoons of Parmesan more and move it with the spoon but do not beat! I had some pesto left over and I used it for other recipes!

For the zucchini nest I used a device that turns and cuts the zucchini into spaghetti. But of course you can use the peeler and cut the zucchini into thin strips "spaghetti" style. I did not peel the zucchini, and with one zucchini it is enough to make 4 nests, each one can add the quantity that he/she likes.

Add oil to the frying pan over medium heat and place the zucchini in a nest shape leaving a hole in the middle to put the egg later. Let the zucchini cook for about 4 or 5 minutes.

Now add the eggs in the holes of the zucchini and cover to cook the egg for about 4 minutes. Watch them, it depends on the fire, because if you do it too long the egg will overcook. We can add a pinch of pepper to taste.

Once done set aside and add our pistachio pesto for the nest the amount that we most like and a little parmesan to taste on top. And ready to eat!!!!🍳😋👩🏼🍳 is delicious! TIP‼️‼️ basil at least for me is not easy to find, that's why I have a tiny plant at home. But you could replace the basil with spinach leaves, which are super easy to find already packaged. Logically it is not the same because the basil has a very characteristic flavor, but it is also very tasty 👍🏻
