Soak the dates

For the base: Chop the almonds with the help of a food processor until they are flour (or use almond flour). Add the 40 grams of drained dates and the coconut oil in the food processor. Once integrated, put in the bottom of our molds with the help of a spoon (0, 5-1 cm). Refrigerate while preparing the next step.

For the filling: Hydrate 4 sheets of gelatin in cold water. Meanwhile, bring the whipping cream and cream cheese to a simmer and add the remaining crushed dates or the sweetener of choice. Once integrated, turn off the heat and add the drained gelatine leaves. Stir until dissolved and place on the base of the mold. Refrigerate while preparing the next step.

For the top layer: Hydrate 2 gelatin sheets in cold water. Peel, chop and beat the mango. Put the beaten mango in a saucepan over low heat and remove once hot. Add the drained gelatine, stir until well blended and pour over the filling in the glass. Decorate and refrigerate for at least 2 hours. Finally, enjoy🤩🤩🤩.
