Tomato soup with smoked salmon

Well ripe tomatoes. We make a small cut at the tip and put them in boiling water to peel them well. Peel the tomatoes, cut into quarters and set aside.

Fry the onion and garlic in a little olive oil for 5-6 minutes. Be careful not to burn them.

Add the tomatoes and let it cook for a while. About 10 minutes.

When the time has elapsed, add the vegetable broth to cover the tomatoes and the sofrito, always adding more or less quantity depending on whether you like a creamy or liquid texture. Let it boil for about 10 minutes.

At the end add salt, pepper and basil and blend.

To serve, add a splash of cream and pieces of smoked salmon.
