Cut the potatoes into small, thin pieces. It is important that all the pieces have the same size and thickness.

Add the cut potatoes in a bowl with a drizzle of olive oil and salt. Stir.

Cover the bowl with two layers of transparent paper without touching the potatoes. Pierce it with a fork or knife to allow steam to escape. Microwave for about 15 minutes.

After 15 minutes, beat the eggs in a bowl and add the potatoes. Let the potatoes rest in the egg for 3-5 minutes.
