Chop the vegetables and set aside

We brown the seasoned thighs for 5 minutes on each side over medium high heat.

Add the onion, leek and garlic and lower the heat to medium.

When it is poached, add the carrot, season again with salt and pepper and cook for 10 minutes.

Add the crushed tomato and cook for 30 minutes over low heat.

At this point I took out the chicken and mashed the sauce because I don't like onion. When it was shredded I put it back on the fire.

Add the olives and a handful of chopped parsley and cook for 20 minutes until the chicken is tender and the sauce is reduced to our taste.

We accompany it with baked sweet potato. Seasoned and baked in the oven for 40 min.
