Chop the garlic, onion and carrot finely. Add a splash of EVOO to a casserole and sauté the garlic and onion for a couple of minutes. Then add the carrot.

Peel and cut the potatoes into 4cm squares and add them to the sauce. After 3 minutes add the leeks cut into 2cm slices and add the salt you want.

After about 6 minutes of sautéing, add 1.5 liters of water and cook for about 30 minutes.
