Cream of green bean soup

Chop the onion and sauté with oil.

Add the remaining vegetables (except the green beans) and stir to mix with the onion sofrito. Add water to cover by 1 finger at the bottom.

Remove the ends of the beans. Separate into two halves of approximately 250gr. Chop one half as in the photo. And the other in two or three large parts.

If you use a food processor or steamer you can steam the beans at the same time as the vegetables (separated, for example the chopped ones on one level and the almost whole ones on another). If not, you can boil them separately or in a basket. The important thing is that the finely chopped beans do not mix with the rest of the cream.

Boil for 20-25 minutes

Add the halved beans to the vegetables and reserve the chopped ones. Blend the cream and season to taste. Serve with the reserved beans on top.
