With the help of a mandolin or a peeler, slice part of the zucchini and set aside in a bowl with cold water.

Cut the leftover zucchini into small cubes. Cut the rest of the vegetables into small cubes and set aside.

In a frying pan with EVOO, add the red bell pepper and the diced zucchini. Sauté until the zucchini is transparent and, when it is, add the mushrooms and the crushed tomato.

Cook until the tomato is reduced, season with salt and pepper and add the spices to taste and set aside on a plate. In the same pan, add the turkey minced meat (previously seasoned to taste) and cook. When it is ready, mix with the reserved vegetables.

Brush a baking dish with EVOO and place a layer of the reserved zucchini slices (previously dried with kitchen paper).

Top with the vegetable and meat mixture and a little grated cheese. Repeat the layers until the desired height is reached.

When ready, sprinkle some cheese triangles on top and bake for 20 minutes at 180°C (with the oven preheated).
